At Green Cannabis Dispensary, we believe cannabis is about more than what's on the shelf. It's about the people, the culture, and the community it brings together here in Las Vegas. That's exactly why we're proud to feature the return of HIGHLY INFORMED, hosted by Edvin Imperial (@edvincible_), and this week's standout conversation with one of the most connected creatives in the city: Coco Jenkins.
If you care about local Vegas cannabis culture, this is an episode worth your time. Here's a look at what went down.

Who Is Coco Jenkins?
Coco Jenkins is a Las Vegas staple. She's the founder of Nothing to Do LV (ntdlv.com), an independent platform that puts Vegas locals on to everything happening in the city, from music and art to food, nature, and community events. She's also the creator of the Underground Coloring Club, a homegrown experience that has quietly become one of the most beloved gatherings in the local cannabis scene.
Born in the Philippines and raised between Pittsburgh and Las Vegas, Coco brings a mixed Black and Filipino perspective that shapes everything she builds. Before all of this, she spent years as a middle school orchestra teacher and played in the long-running Vegas hip-hop band Rhyme and Rhythm. That range as a musician, educator, and community builder is exactly what makes her such a compelling guest.
The Underground Coloring Club: A Simple Idea Done Right
The premise of the Underground Coloring Club is refreshingly simple. As Coco puts it, three things happen: you color, you smoke, and she plays her beats. For three hours, people are outside, relaxed, creating, and connecting. There's no pressure to make a masterpiece, no rigid instructions, just good energy.
That low-key format is the whole point. Coco contrasts it with the typical "puff and paint," where everyone feels like they have to follow along and produce something perfect. At the Coloring Club, you can pick up a coloring sheet, chat with the people around you, or fully dial into your creativity. It's whatever you need it to be.
The impact is real. In the episode, Coco shares the story of a longtime community member affectionately known as Red Eye Granny, who was moved to tears at a recent event, saying it reminded her of being a hippie again and that it was the best she'd felt in months. Those are the moments that keep Coco building.
The Power of Consistency
One of the most inspiring parts of the conversation is how the Underground Coloring Club actually started. Coco was originally brought in to create a coloring event for another venue. When that arrangement ran its course, rather than let the idea go, she decided to build something of her own. She already had the vision, the artist connections, and the know-how, so she took what she'd learned and launched the Underground Coloring Club independently.
"If you're doing something that you believe in, just make sure you stay at it. It might not be successful at first, but it just takes some time." Coco Jenkins
It wasn't an overnight success. In the beginning, she was practically begging people to show up, covering the costs out of her own pocket, and drawing maybe 20 people at a time. But she believed in it. Within six months, the events were sold out and drawing sponsors. Today the Underground Coloring Club is proudly sponsored by STIIIZY, with past support from brands like THC Design. Both are names you'll find on the shelves at Green Cannabis Dispensary.
The real takeaway is bigger than one event. Coco's whole journey is a lesson in consistency: if you truly believe in something, stick with it. It might not look poppin right away, but if you stay at it and don't compromise on your vision, you can find success in whatever you set out to do. That's a message that hits far beyond the coloring table.
Cannabis, Creativity, and the Chill Teacher
A recurring theme in the episode is how cannabis fits into a creative and professional life. Coco talks candidly about her years teaching middle school, and how cannabis helped her stay calm, cool, and collected in a classroom full of energetic 11-to-15-year-olds. Where other teachers might match a student's chaotic energy, she stayed level and responded thoughtfully, which, as any educator knows, is half the job.
"They're coming at me crazy. I am not coming at them crazy. I am calm, I'm collected, I hear them, I respond appropriately." Coco Jenkins
She also describes how her relationship with cannabis has evolved over time. What started as a sleep aid has become something closer to how people appreciate fine wine: it's about the flavors, the aromas, the ritual, and the experience. It's a philosophy host Edvin Imperial knows well, as he's long championed the idea of cannabis as craft, appreciated for its nuance the same way a good bottle of wine is. That mindset is one we share at Green Cannabis Dispensary.
More to Vegas Than the Strip
At its heart, this episode is a love letter to local Las Vegas. Coco is quick to clarify that she's not anti-Strip. She simply wants people to know there's so much more to the city. Once you've done the gambling, the drinking, and the clubbing, there's a whole world of music, art, nature, and community waiting.
She points to Vegas as an underrated destination for locals in the know, with far more happening off the Strip than most visitors realize. And through Nothing to Do LV, Coco highlights everything from farmers markets to underground events, championing the creative, one-of-a-kind experiences that locals actually build for one another.
Nothing to Do LV: Your Guide to Real Vegas Culture
If there's one thing to take away from this episode beyond the full watch, it's to bookmark ntdlv.com. Nothing to Do LV is Coco's platform dedicated to connecting people with #VegasCulture, and it's built for anyone looking to get off the beaten path of Las Vegas Boulevard.
Head to the site and you'll find a genuinely packed calendar of local happenings: farmers markets across the valley, the Underground Coloring Club, all-styles dance battles, open art nights, film and music meetups, sound baths, poetry nights, karaoke, artisan markets in the Arts District, and plenty more. It's a living snapshot of what's actually going on in the city week to week, curated by locals who care.
What makes it special is the mission behind it. Nothing to Do LV offers a less corporatized, more community-first take on local events. And here's the part worth shouting out: it's free for locals to promote their own events on the platform. If you're a Vegas creative, small business, or organizer putting something together, NTDLV gives you a place to get seen without a big marketing budget or an algorithm deciding who gets to find you.
That spirit of building space for others is exactly what connects Coco's work, from the Coloring Club to the platform itself. It's local people creating experiences for local people, and it's the kind of Vegas culture we're always happy to champion.
